In my second (you can check out the first here) collaboration with Pranita, I’m making a salad. Since the entire brief was about her wanting to lose weight, and be healthy while still eating delicious food, I decided to do a salad. So the concept of Green Goddess was developed wherein you use a bunch of green herbs and vegetables and create a dish, be it a pasta, pizza, salad, even a smoothie (stay tuned, we have more coming!). More often than not the salads have avocado, however, I was unable to source any good avocado, so I haven’t used it. However, in a lot of ways, it still is one.

For the salad:
- Spinach leaves
- Cherry tomatoes, halved
For the dressing:
- Olive oil
Start by cooking the quinoa. I cook it in the microwave, coz it’s honestly a lot less hassle. You want to cook it in a 1:1.5 quinoa: water ratio with a little salt and butter for about 10 minutes.
Take it out, and allow it to cool.
In the meanwhile, you can make the dressing. Blend the herbs with some olive oil and a little salt until coarse but thin. You can add a decent amount of the olive oil so that the dressing is relatively thin.
Cut the spinach into ribbons and toss with the cherry tomatoes and quinoa.
Add a few teaspoons of the dressing to the bowl, and toss. Season with a little salt and pepper.
