I’m currently going through a phase with canned tuna, so bear with me.
I loooove a good Nicoise salad. The potato, the beans, the dressing, it’s just so good. So when I found a version of it that goes on toast, I was intrigued. The original recipe is from Epicurious and is very very similar to the one I’ve used. I actually don’t think there are any changes actually as it were.
It’s also quite perfect for a nice relaxing breakfast.
There isn’t anything as such in the recipe that isn’t easily available, besides the tuna maybe.
For the salad:
- Canned tuna
- Cherry tomatoes halved
- Onions, sliced
- Slice bread
- Chilli powder
- Egg, boiled for 8 minutes
- Garlic mince
- Lemon juice
- Olives, sliced
Start by tossing the halved cherry tomatoes, onion and lime juice in a bowl with some olive oil, salt and pepper. Set it aside.
Next fry the sliced bread. Yes, I said fry. No, not deep fry. Pan fry. Heat some olive oil in a pan, and place a slice of bread. Allow the slice to brown on one side, and then flip. Remember to handle the bread carefully.
Whisk some mayonnaise, chilli powder, vinegar and the garlic mince until emulsified.
Now we can start building the toast.
Spread a layer of the mayonnaise onto the bread and top with chunks of tuna.
Add a few pieces of the tomato and onion mixture.
Cut up the egg into small pieces and place on top.
Garnish it with a few sprigs of parsley.
