So yesterday I went for a potluck dinner, and it was my job to bring dessert. Which would normally be easy, however, I had to make something eggless. I don’t normally do very well with eggless coz most of what I try making turns into a disaster. But then I realized that a tart would be the answer to my problems, and a Snickers one would honestly just be the cherry on top.
This tart is very similar to the chocolate and salted caramel one I made a couple of years ago. The recipe for the caramel as well as the ganache is the same as that one, however, there are some changes I will explain along the way. The only difference is the tart shell recipe, which is completely eggless. The recipe I’ve used is from Sugar & Spice by Radhika, however, I have changed it up a bit. Rather than using castor sugar, I used icing sugar, which I believe worked better. Also, I did blind bake it, unlike what she did.
For the tart shell:
- 1 and 1/2 cups flour
- 100g cold butter, cut into cubes
- 1/2 cup icing sugar
- 1tbsp chilled water
The steps to this tart are almost the same as the last one, so I’m just going to put a lot of pictures.
For the shell, you want to sift the flour and icing sugar together. Then with the tips of your fingers mix the butter and flour mixture together. The butter will melt with the heat from your fingers and the mixture will begin to resemble breadcrumbs. Add about half a tablespoon of cold water to the mixture and bring it together. Eventually, the dough will begin to come together. If you need more water, go ahead and add more, however, remember to add only a little at a time.
Roll out the dough and line a tart ring. Blind bake at 180C for about 15 minutes or until the edges go golden.
Once you’ve made the caramel, add some chopped peanuts and give it a good mix. Spread the caramel evenly in the tart and leave to set in the fridge overnight.
Soften the ganache you’ve made and spread it evenly over the caramel. I would say leave it overnight again just so that everything gets a chance to set.
I cut up a few snickers bars and put them on top just as a garnish.
