Bread Pasta

I don’t know how many years ago this was, but I was watching one of Donna Hay’s cooking shows, and she made bread pasta. I know it sounds a little odd, but trust me it’s amazing. This isn’t the recipe I saw, its a version of it. I don’t remember the recipe at all, besides the fact that she crumbled in some bread. Essentially, you can add whichever flavourings you like, but the base for the dish remains as pasta and bread.

This is a recipe I absolutely love and make for myself at least once a week. You can make it a non-vegetarian one if you want, by adding some bacon, but it tastes great as is.

For the pasta:

  • Fettuccine
  • Day old bread
  • Parsley
  • Garlic
  • Red chilli

The first thing you want to do is put the pasta to boil.

In the meantime, start crumbling up some bread. You want tiny pieces so that the bread toasts nicely in the pan.

In a pan heat some olive oil and add some garlic and some red chilli. I know red chilli isn’t technically traditional, but it helps give a bit of a bite.

Once the garlic is nice and brown, add in the bread and mix. You want to give the bread a couple of minutes so that it toasts well, and gets a nice crunch. Add some chopped parsley.

When the pasta is done, drain it and drizzle with some olive oil. Add it to the pan and mix everything together, allowing the pasta to be coated in the bread.

Season with salt and pepper, and serve.
