I have been gone a while. A LONG WHILE. However, I am back. I’m planning to change things up a bit, and one of those changes is starting Meatless Monday. Every Monday I’ll be posting a vegetarian recipe. I’m not someone who particularly likes vegetarian food. In fact, I’m one of those people that mocks vegetarians. However, I’ve have decided to change my ways, and do some posts on it.
To kick off this little idea, I’ve made some eggplant pizzas. They are super super easy, and so much healthier. Yes I know, I’m making pizzas ‘healthy’, but its honestly really nice.
For the pizzas:
- Large eggplant
- Tomato base
- Cherry tomatoes
- Chilli Flakes
- Mozerella and processed cheese
When I say a large eggplant, I mean a large one like in the picture. In India you get the tiny little ones (I’m not really sure about abroad), those won’t work here.
So to start, you want to cut thin slices of the eggplant since they form the base of your pizza. Place the cut slices in a bowl of water and set aside.
Move onto the mushrooms and cherry tomatoes,, you want to slice the mushrooms and half the tomatoes.
Line a baking tray and brush on a little oil. Place the eggplant circles, and brush with some more oil. Sprinkle with salt and pepper and place in the oven at 180C for about 10 minutes or until lightly brown and crisp.
Once out of the oven, spread about a teaspoon of the tomato base onto each circle.
On goes the cheese. I’ve used a mix of both processed and mozerella cheese, since it improves flavour.
Next for the toppings, I went with muchroom, tomatoes and some basil leaves. You can essentially put whatever vegetable you want on there. Sprinkle on some oregano and chilli flakes, drizzle with oil and bake for another 10 minutes, or until the cheese melts.
You may want to turn the oven to broil so that the cheese melts properly, but it depends on your oven.
