Instagram has been full of decorative sugar cookies. So I thought for the summer why not try making a bunch of them. However I decorate them though, my recipe for the cookies as well as the royal icing stays the same. My recipe for the icing is already up, I used it for the Skeleton Gingerbread Cookies.
The recipe I use is super simple. It’s an adaptation from the one on Joy of Baking.
For the Cookies:
- 3 cups flour
- 1 tsp baking soda
- 227g butter
- 1 cup sugar
- 2 eggs
- 2 tsp vanilla
Start off by creaming the butter and sugar until fluffy with a mixer.
In another bowl, whisk together the flour and baking soda.
Break in the eggs and add the vanilla. Once it has all come together, add in the flour, little by little, allowing it to combine.
When all the flour is in, empty it out onto the counter, knead it together and then put it into the fridge to rest.
After about an hour or so, cut the portion you want to use. Dust the counter, and roll out the dough.
Using a cookie cutter of your choice, cut the dough and place it on a baking tray with a silicon mat.
Bake at 180C for about 15 minutes or until the cookies turn golden brown.
Then all you have to do is ice away!
