I’ve made this for years, but this recipe is a new one I tried. I originally saw the recipe on one of Nigella’s show and have made it that way for years. But this recipe is mix between hers and Jamie Oliver’s.
For the spaghetti:
- 3 egg yolks
- 120ml cream
- Parmesan Cream
Cook the spaghetti according to the instructions on the packet till al dante.
Cut up the bacon and fry it off in a pan till crispy.
Strain off the pasta once cooked and add it into the pan with the bacon.
In the meanwhile whisk the egg yolks with the cream, adding salt and pepper to season. Grate in a whole load of cheese and mix gently.
When the pan with the pasta is warm, add in the egg and cream mixture and mix gently. The pan needs to be warm or else the egg will cook.
Serve and grate some parmesan on top.
