Since I haven’t done much of savoury so far, I thought I’d start now. This is a simple salad which takes no time at all. It’s the kind of thing I’d put together in the middle of the night and rightfully so since I got the recipe from Nigella’s Forever Summer book. It also works really well as the start to a meal.
For the salad:
- Olive oil
- Spinach leaves
- Boneless chicken, cubed
- Red wine vinegar
In a pan heat the olive oil and then add in the bacon. I used a harissa infused olive oil which helps give it a slight punch.
In another pan, I cooked the chicken with some salt and pepper.
Once the bacon is cooked, break it up into small bits, leaving the oil and all the juicy flavour of the bacon in the pan.
Add some red wine vinegar to the pan and let it hiss and sizzle.
Wash the spinach add toss it with the bacon and chicken bits.
Drizzle the pan juices over the salad and serve.
