Bitter Chocolate Ice Cream

In keeping with showing you a couple of classics before going to the fancy stuff, I thought I’d show you guys a simple bitter chocolate ice cream. This is infact one of the easier ice creams to make since it doesnt require any cream, however it does mean more churning and longer freezing time since more ice crystals form.

For the ice cream:

  • 4 egg yolks
  • 90g caster sugar
  • 500ml milk
  • 100g dark chocolate
  • 125g cocoa powder


Whisk the egg yolks and sugar toegther till pale and fluffy.

Heat the milk in a saucepan. Add in the chocolate and cocoa powder till it is dissolved. Simmer till the milk is steaming.

Pour the steaming milk over the egg yolks, whisking continuously so that the eggs don’t cook.

Pour the mixture into the dish you want to freeze it in, leaving it to cool before putting it in the freezer.

If you don’t have an ice cream churner, churn it by hand the same way as the vanilla ice cream.

I find that chocolate ice cream goes best with waffle cones, so I bought some from Baskin Robbins.
